CHARDONNAY
Dalle uve di Chardonnay si possono ottenere vini fermi, frizzanti o spumanti, con gradazione alcolica alta e acidità piuttosto elevata.
Il colore del vino è giallo paglierino non particolarmente carico, il profumo, caratteristico, è delicato e fruttato, il sapore elegante e armonico.
Se invecchiato assume note di frutta secca.

If harvested early, Cortese grape offers acidic wines, of color and light body, to be consumed in the first three years. But Gavi, produced from more mature, more structured grapes, can age for a long time in bottle opening to tertiary and mineral aromas of great elegance.
It is produced in three different types: quiet, sparkling and sparkling.
As an aperitif, it should be tasted at 6-8 C; on the table at 12 C.

GNIGNOLINO D’ASTI
I grappoli hanno dimensione medio-grande con forme tendenti al piramidale mentre gli acini, medio-piccoli, tendono alla forma ellittica.
Il vitigno, scarsamente resistente alle malattie, predilige l'esposizione al sole e terreni asciutti e sabbiosi.

The bunches have medium-large size with shapes tending to pyramidal while the berries, medium-small, tend to the elliptical shape.
The vine, poorly resistant to diseases, prefers exposure to the sun and dry and sandy soils.
IL PROSECCO
In tutti i casi si tratta di un vino dal colore giallo paglierino, dall'odore fine e dal sapore fresco. La variante spumante può essere brut, extra-dry o dry, mentre le altre sono solo secche.
Le tipologie prodotte mediante fermentazione tradizionale in bottiglia possono presentare una velatura. Tali vini hanno un sapore secco, frizzante e fruttato, con eventuali sentori di crosta di pane e lievito.
Il vitigno base per la produzione di Prosecco è la glera, le cui uve devono costituire almeno l'85% del totale. Una piccola frazione, comunque non superiore al 15% del totale, può essere costituita da verdiso, bianchetta trevigiana, perera, glera lunga, chardonnay, pinot bianco, pinot grigio e pinot nero vinificato in bianco.
I terreni adatti alla coltura dei vigneti sono quelli ben esposti e drenati, quindi non sono ammessi terreni ad alta dotazione idrica o torbosi. In ciascun appezzamento devono sussistere almeno 2.300 ceppi per ettaro. Le tecniche di coltivazione e impianto sono quelle "classiche" che non provocano modificazioni alla qualità di uva e vino, prive di forzature.

The types produced by traditional fermentation in bottle can have a veiling. These wines have a dry, sparkling and fruity taste, with possible hints of bread crust and yeast.
The basic vine for the production of Prosecco is glera, whose grapes must constitute at least 85% of the total. A small fraction, however not more than 15% of the total, can be constituted by verdiso, bianchetta trevigiana, perera, glera lunga, chardonnay, pinot bianco, pinot grigio and pinot nero vinified in white.
The soils suitable for the cultivation of vineyards are well exposed and drained, so no high water or peaty soils are allowed. There must be at least 2,300 vines per hectare in each plot. The cultivation and planting techniques are those "classic" that do not cause changes to the quality of grapes and wine, without forcing.
