ACETO BALSAMICO

E' ottenuto da mosti di uva fermentati e aceto di vino. Il suo sapore ricorda quello del vino, è aspro e marcato e viene lasciato invecchiare almeno due mesi e viene aggiunta una nota di caramello per renderlo leggermente dolce. ________________________________________________________________________________________ It’s made from fermented grape must and wine vinegar. Dalle uve di Chardonnay si possono ottenere vini fermi, frizzanti o spumanti, con gradazione alcolica alta e acidità piuttosto elevata. Il colore del vino è giallo paglierino non particolarmente carico, il profumo, caratteristico, è delicato e fruttato, il sapore elegante e armonico. Gradazione alcolica minima: 10,5%; acidità totale minima: 5 per mille. Se vendemmiata precocemente, l'uva Cortese offre vini acidi, di colore e struttura leggera, da consumarsi nei primi tre anni. Ma il Gavi prodotto da uve più mature, di maggior struttura, può affinare a lungo in bottiglia aprendosi a profumi terziari e minerali di grande eleganza. Viene prodotto in tre diverse tipologie: tranquillo, frizzante e spumante. Come aperitivo va degustato a 6-8 °C; in tavola a 12 °C. _________________________________________________________________________________
