RISO VENERE

Il prodotto assume numerose varianti dettate dalla zona di produzione. Principalmente si tratta di un anello di pasta non lievitata cotto in forno. L'impasto base è composto di farina, acqua o vino, olio e sale a cui vengono talora aggiunta degli ingredienti per insaporirlo, come ad esempio i semi di finocchio.

Mainly it is a ring of unleavened dough baked in the oven. The basic dough is made of flour, water or wine, oil and salt to which are sometimes added ingredients to flavor, such as fennel seeds.

If harvested early, Cortese grape offers acidic wines, of color and light body, to be consumed in the first three years. But Gavi, produced from more mature, more structured grapes, can age for a long time in bottle opening to tertiary and mineral aromas of great elegance.
It is produced in three different types: quiet, sparkling and sparkling.
As an aperitif, it should be tasted at 6-8 C; on the table at 12 C.
IL PROSECCO
In tutti i casi si tratta di un vino dal colore giallo paglierino, dall'odore fine e dal sapore fresco. La variante spumante può essere brut, extra-dry o dry, mentre le altre sono solo secche.
Le tipologie prodotte mediante fermentazione tradizionale in bottiglia possono presentare una velatura. Tali vini hanno un sapore secco, frizzante e fruttato, con eventuali sentori di crosta di pane e lievito.
Il vitigno base per la produzione di Prosecco è la glera, le cui uve devono costituire almeno l'85% del totale. Una piccola frazione, comunque non superiore al 15% del totale, può essere costituita da verdiso, bianchetta trevigiana, perera, glera lunga, chardonnay, pinot bianco, pinot grigio e pinot nero vinificato in bianco.
I terreni adatti alla coltura dei vigneti sono quelli ben esposti e drenati, quindi non sono ammessi terreni ad alta dotazione idrica o torbosi. In ciascun appezzamento devono sussistere almeno 2.300 ceppi per ettaro. Le tecniche di coltivazione e impianto sono quelle "classiche" che non provocano modificazioni alla qualità di uva e vino, prive di forzature.

The types produced by traditional fermentation in bottle can have a veiling. These wines have a dry, sparkling and fruity taste, with possible hints of bread crust and yeast.
The basic vine for the production of Prosecco is glera, whose grapes must constitute at least 85% of the total. A small fraction, however not more than 15% of the total, can be constituted by verdiso, bianchetta trevigiana, perera, glera lunga, chardonnay, pinot bianco, pinot grigio and pinot nero vinified in white.
The soils suitable for the cultivation of vineyards are well exposed and drained, so no high water or peaty soils are allowed. There must be at least 2,300 vines per hectare in each plot. The cultivation and planting techniques are those "classic" that do not cause changes to the quality of grapes and wine, without forcing.

I grappoli hanno dimensione medio-grande con forme tendenti al piramidale mentre gli acini, medio-piccoli, tendono alla forma ellittica.
Il vitigno, scarsamente resistente alle malattie, predilige l'esposizione al sole e terreni asciutti e sabbiosi.

OLIO CORATINA
Caratteristiche sensoriali: Olio di colore verde con riflessi dorati si apre al naso con fruttato di oliva di intensità leggero-media, arricchito da note di erbe amare carciofo e foglie. Al gusto l’amaro e il piccante sono decisi e vengono equilibrati da una lunga percezione di erbe balsamiche e mela verde in chiusura.
Buona la fluidità e l’armonia. In complesso un olio dalle caratteristiche sensoriali ampie e di carattere.
Consigli per l’uso: Semplicemente delizioso su bruschetta. Perfetto su insalate, zuppe di verdure e legumi, verdure alla griglia o al vapore, carne e pesce.
Conservare in luogo fresco ed asciutto al riparo da fonti di calore.

Sensory characteristics: Green oil with golden reflections opens to the nose with fruity olive of light-medium intensity, enriched by notes of bitter herbs artichoke and leaves. To the taste, the bitterness and the spiciness are decided and are balanced by a long perception of balsamic herbs and green apple in the finish.
Good fluidity and harmony. Overall, an oil with ample sensory characteristics and character.
Tips for use: Simply delicious on bruschetta. Perfect on salads, vegetable and legume soups, grilled or steamed vegetables, meat and fish.
Store in a cool, dry place away from heat.
